Grilled Salt Block Lobster with a Lime Basil Butter

Chef Kristine’s Grilled Salt Block Lobster with a Lime Basil Butter
Serves 2
All You Need
• 1 – Himalayan salt block
• 2 – 5oz Lobster tail, split
• Olive oil – as needed
• ¼ stick of butter – softened
• 4 large basil leaves – minced
• 1 lime – zested
• ½ tsp minced garlic
• Salt and pepper to taste
All You Do
1. Start you grill and place your salt block on top of the grill, slowly heat the salt block (this will take about a 45 minute process to slowly increase heat so the block does not break)
2. While salt block is heating, split your lobster tail. Season with olive oil, salt and pepper and set aside until time to grill
3. Take your softened butter and mix in basil leaves, lime zest and minced garlic.
4. Once salt block is heated to roughly 500 degrees place your lobster tail on top of the salt block and cook for about 5 minutes, place some of the mixed butter on top of the meat on the tail and continue to cook for another 3-4 minutes or until butter is melted into the tail. (Remember lobster should be cook roughly 15 minutes per pound so if you lobster tail is bigger than 5 ounces adjust cooking time according to the ounces you are cooking)
5. Serve and Enjoy!
