Greek Quinoa Power Bowl

Makes 4 power bowls
Ingredients
• 2 cups uncooked quinoa, cook according to package and cool
• 1 small Cucumber cut in ¼’s, small diced
• 1 Roma Tomatoes, small diced
• ¼ cup Red onion, small diced
• ½ cup Feta Cheese
• ½ cup Kalamata Olives
• 1 cup kale, chopped
• 1 cup Zesty Italian
• 2 chicken breasts, fully cooked and cooled, cut into chunks
Directions
1. Cook quinoa according to package, set aside in cooler, to be completely cooled
2. Cut your vegetables according to ingredient label and place in a bowl
3. Once quinoa is cooled completely, add your vegetables, feta, olives and dressing, toss and divide.
4. Disperse your chicken breast evenly between the 4 power bowls
